1) Southern Fried Chicken 🍗 Nachos

Recipe powered by Old El Paso @ixxirja đźš€

Ingredients (to prepare a portion for 4 people):

  • 1/2 Can refried Old El Paso beans
  • 3 x Types (Original, Fajita & Cheese) of Old El Paso Nachos (3 Handfuls of each)
  • Handful of Black Olives
  • 300 grams cheddar
  • 1 plum tomato
  • 5 medium spring onions
  • 1 small jalapeño
  • Southern Fried Chicken Balls/Strips
  • 100 grams Old El Paso salsa
  • Sour cream, for serving

Method 🤩

  1. Arrange a rack in the middle of the oven and heat the oven to 210 degrees C.
  2. Prepare the following, keeping them separate: Open 1 can of Old El Paso refried beans. Drain 1 can sliced black olives. Grate 300 grams of cheddar (or Monterey jack cheese, if available) on the large holes of a box grater (about 3 cups). Chop 1 plum tomato. Thinly slice 8 spring onions and 1 small jalapeño.
  3. Open the Old El Paso Nachos into a bowl.
  4. Add 100G of Old El Paso salsa and toss the Old El Paso nachos to combine.
  5. Build the nachos: arrange about half of the tortilla chips in the dish,, in an even layer. Top with half of the fried chicken and a handful of shredded cheese.
  6. Layer the remaining chips on top, followed by the remaining chicken and cheese. Top with dollops of the Old El Paso refried beans.
  7. Bake the nachos until the cheese is melted and the chips around the edges are beginning to brown, about 8 minutes. Just before serving, garnish with the black olives, jalapeño, tomato, dollops of sour cream, and scallions.
  8. Serve and dip in the remaining Salsa (Old El Paso) & Old El Paso Cheese & Red pepper dip.


2) Cheesy Beef Enchiladas

Ingredients

  • 300 G of minced beef (Rump, Chuck or Standard Ground Beef)
  • 50 Grams chopped green chilies, undrained
  • 1 teaspoon minced garlic
  • ½ teaspoon ground cumin
  • Old el Paso Enchiladas
  • Old el paso enchilada cooking sauce
  • Old el paso seasoning mix
  • 350 Grams grated mozzarella cheese
  • 2 green onions, thinly sliced
  • Old el paso refried beans
  • Sour cream for serving
  • Old el Paso Cheese & Red Pepper Dip

Directions

  1. Preheat the oven to 200 degrees C. Cook Minced beef in large skillet over MEDIUM-HIGH heat for 8-10 minutes or until thoroughly cooked, stirring frequently.
  2. Add chilies, garlic and cumin; mix well. Cook over medium heat 2-3 minutes or until thoroughly heated, stirring frequently.
  3. Prepare Old El Paso Enchilada sauce using cooking instructions. Once almost ready, add in the cooked beef mix to the sauce mix.
  4. Open the Old El Paso Enchilada Enchilada and prepare it on a flat plate.
  5. Brush both sides of 1 Old El Paso enchilada lightly with enchilada sauce. Spoon about ÂĽ cup beef mixture down center of enchilada; top with rounded tablespoon of cheese. Roll enchilada up; place, seam-side down, in lightly greased 13x9-inch baking dish. Repeat with remaining tortillas (fast speed). Pour remaining Old El Paso enchilada sauce over enchiladas; top with remaining cheese.
  6. Bake for 20-25 minutes or until enchiladas are thoroughly heated. Top with onions. Serve with sour cream & Old el Paso Cheese & Red Pepper Dip, if desired.


3) Spicy Chorizo Tacos

Ingredients:

  • 2 teaspoons vegetable oil
  • 1 large white onion, finely diced (about 1 1/2 cups), divided
  • 1 jalapeno pepper, finely diced
  • 1 spanish chorizo sausage, diced
  • 1 red chilli pepper
  • 1 green chilli pepper
  • Old El Paso Seasoning mix
  • One box Old El Paso Stand N Stuff Tacos
  • Old El Paso salsa (in the taco kit)
  • 1/4 cup chopped fresh cilantro leaves and fine stems
  • 1 cup sour cream
  • 2 limes, cut into quarters/sixes
  • 1/2 cup crumbled queso fresco or feta cheese
  • 1 avocado, sliced

Method:

  1. Heat vegetable oil in a large cast iron or stainless steel skillet over medium-high heat until simmering. - - Add half white onions and all of jalapeno and cook, stirring, until softened and starting to color, about 6 minutes. Add the Old El Paso taco seasoning + 100ml of water to the mixture for 5 minutes.
  2. Add chorizo and cook, stirring and breaking up sausage, until completely cooked through and starting to crisp and char in bits, about 10 minutes total. Stir in red chilies & green chillies and remove from heat.
  3. Remove Tacos from Old el Paso packaging
  4. Warm Old El Paso Tacos up in the oven whilst chorizo cooks
  5. Transfer chorizo to a warm serving bowl. Combine remaining onion with cilantro. Serve chorizo immediately with warm tortillas, top with Old el paso salsa, cilantro and onions, crema, queso fresco/feta cheese, avocado, and lime wedges.
  6. Dip Ready Old El Paso Tacos into Old El Paso Salsa & enjoy,
